Aussie rum cocktails you’ll be sipping on all year long

Rum may be drunk straight from the bottle like they did in the age of piracy, but we don’t need to do that now. Rum is a very complex tasting liquor that is worth drinking for enjoyment and trying in different ways. It is an easy drink to mix with basically anything you may have sitting around at home! Check out some of these rum cocktails that any Australian rum lover will enjoy! We have chosen the range of spirits and rums from one of WA’s favourites, Illegal Tender Rum Co, to create those delicious recipes.




Dark n’ Stormy

It’s a classic, but it’s a good one. As the name hints at, it’s going to be a cocktail that is sure to stir some strong, deep and spicy flavours offered from the ginger beer and rum. This cocktail has its origin in WW1, where they would mix rum and ginger beer to battle the seasickness from those dark n’ stormy nights.

Ingredients:

60ml Illegal Tender Rum Co’ Distillers Cut
150ml ginger beer
Squeeze of lime juice
Lime wedge

Directions:

Fill a glass with ice cubes and add the rum
Pour in lime juice and ginger beer, then stir
Serve with a lime wedge.

Australian Rum Buck Cocktail

The Australian Rum Buck Cocktail is a cocktail for those who still want that delicious spicy kick that comes from the ginger ale, and rum but want some respite with a touch of sweetness. This will be a hit amongst your friends at any gathering; one taste will soon turn into multiple glasses of this great cocktail. Of course, drink moderately and responsibly.

Ingredients:

30ml Illegal Tender Rum Co’ Distillers Cut
30ml lemonade
60ml ginger ale
Squeeze of lemon juice
Lemon wedge

Directions:

Fill glass with ice and add the rum
Pour in ginger ale and lemonade
Add a squeeze of lemon juice
Serve with a lemon wedge

Rum Runner

Freshen up your summer with this flavourful drink. This tropical drink incorporates the feeling of being on a beach with its banana and blackberry liqueurs. A lot of different ingredients go into this one, but it’s well worth it to go out of your way to collect all the elements required for this drink. If you’re one for mixing cocktails and experimenting, you’re sure to have most of these anyway.

Ingredients:

30ml Illegal Tender Rum Co’ 1808 Barely Legal
30ml Illegal Tender Rum Co’ Distillers Cut
30ml banana liqueur
15ml blackberry liqueur
60ml pineapple juice
15ml grenadineSqueeze of lime juice
Pineapple wedge

Directions:

Pour ice into shaker
Pour in the rum, blackberry liqueur, banana liqueur, pineapple juice, grenadine and lime juice
Shake until chilled
Strain into glass
Serve with a pineapple wedge

Mojito

Without a doubt one of the most refreshing drinks you can get, that isn’t too sweet. This classic Cuban drink’s bubbly and minty taste is perfect for a beach or pool party. It’s an easy and fun drink that you just won’t be able to get enough of!

Ingredients:

60ml Illegal Tender Rum Co’ 1808 Barely Legal
3-5 mint leaves, depending on taste
30ml lime juice
15ml Simple syrup
Soda water
Lime wedge

Directions:

Pour ice into shaker
Pour in rum, simple syrup, lime juice and add mint leaves
Shake until chilled
Strain into glass
Top up with soda water
Serve with lime wedge

Daiquiri

Up for a sour punch? The Daiquiri is perfect for that mouth sucking flavour we all can’t get enough of. Try blending the ingredients in a blender for a frozen daiquiri, for one of the most addictive drinks you can have.

Ingredients:

40ml Illegal Tender Rum Co’ 1808 Barely Legal
30ml lemon juice
20ml simple syrup

Directions:

Pour ice into shaker
Pour in rum, simple syrup and lemon juice
Shake until chilled
Strain into glass
Serve without garnish

Pina Colada

Another summer classic, for those that like a creamy and rich drink, and perfect for those who don’t really like the taste of strong alcohol but still want to join in the fun. This is an easy recipe that requires a blender to prepare.

Ingredients:

60ml Illegal Tender Rum Co’ 1808 Barely Legal
60ml coconut cream
120ml pineapple juice
Pineapple wedge

Directions:

Pour ice into blender
Pour rum, coconut cream and pineapple juice into blender
Blend until smooth
Pour into glass and serve with pineapple wedge

Painkiller

Do want a tropical drink that isn’t a Pina Colada, then the Painkiller is for you. It doesn’t have the thick and creamy texture but still has that great tropical coconut flavour. This is a spicey, coconut, rum drink that has a dash of nutmeg to set everything together.

Ingredients:

60ml Illegal Tender Rum Co’ Distillers Cut Rum
100ml pineapple juice
30ml orange juice
30ml cream of coconut
Grated Nutmeg

Directions:

Pour ice into shaker
Pour in rum, orange juice, pineapple juice and cream of coconut
Shake until chilled
Strain into glass
Serve with a small grating of nutmeg on the top

Hot Buttered Rum

This is perfect for when the weather is getting its chill on. This is a complex winter drink, with lots of spices, and not just from the rum. The warmth and spiciness are perfect for a romantic winter's night with your significant other by the fireplace. We recommend using a spiced spirit or rum with this, to enrich those complex and spicy flavours that are sure to warm you up.

Ingredients:

60ml Illegal Tender Rum Co’ Spiced Spirit
2 teaspoons of brown sugar
1 tablespoon of unsalted butter
Half teaspoon of vanilla extract
Half teaspoon ground cinnamon
Half teaspoon ground nutmeg
100ml of hot water
Cinnamon stick

Directions:

Combine brown sugar, butter, vanilla extract, nutmeg and cinnamon in a mug mix well together or muddle.
Pour in the rum and hot water
Serve with a cinnamon stick

Bushwhacker Cocktail

This is one for the lovers of rich and decadent cocktails. It’s an alcoholic milkshake that has the deep spicy flavours of rum that we all know and love, mixed with a beautiful and rich chocolate liqueur. This might sound like more of a dessert for some, but who are we to judge? One thing is for sure, it will leave you wanting more.

Ingredients:

60ml Illegal Tender Rum Co’ Distillers Cut Rum
30ml coffee liqueur
30ml dark chocolate liqueur
60ml whole milk
30ml cream of coconut
Ground nutmeg

Directions:

Pour ice into blender
Pour rum, coffee liqueur, dark chocolate liqueur, whole milk and cream of coconut into blender
Blend until smooth and frothy
Pour into glass and serve with a little ground nutmeg

Gin Libre Cocktail

Raise your hand if you don’t like rum and coke. We knew it, there aren’t many of you out there and we get it. It’s a classic, easy to make and perhaps one of the most common household cocktails everyone has made before. However, we couldn’t just give you a simple rum and coke because that would be a little too easy. So instead we decided to shake it up a bit! This recipe has the citrusy aroma from the spirit we all know and love, gin! Try this one out with the hand-bottled, double-distilled Stableviews Distillery Abrolhos Gin.

30ml Stableviews Distillery Abrolhos Gin
30ml Illegal Tender Rum Co’ Distillers Cut
Chilled Coca-cola
Squeeze of lime juice

Directions:

Pour gin and rum into glass
Pour until full with chilled coca-cola
Add a squeeze of lime juice
Serve without garnish
