The Carter has just launched a seriously spicy and delicious new menu by Exec Chef, Graeme Hunt

The Carter has become known as Sydney’s RnB destination combining an appreciation for music, art, and street food, in a vibrant urban fit-out that transports you to the streets of New York. The three-level heritage-listed venue is located on O’Connell Street in Sydney’s CBD and might be known to most as Sydney’s best destination for RnB, Reggae, HipHop & Old School hits.

Quietly, while the CBD has been re-awakening, Chef Graeme Hunt (ex Chin Chin, Rockpool Group), joined The Carter and has been working on redefining and elevating the food and drinking experience.

Hunt has designed an entirely new menu, full of fresh produce and fried bites with his signature Asian fusion influence. Everything created is designed to be shared.

Signature dishes include kingfish sashimi splashed with wasabi & black pepper dressing and crispy pork belly with sweet soy & pepper sauce sprinkled with sesame crunch. Fried delights include fried chicken wings with togarashi spice and a mouth-watering prawn katsu burger. Vego-friendly options include roast sugarloaf cabbage with curry butter and cucumber, plus raw zucchini salad topped with tamarind & basil dressing with perfectly crisped onions.

Chady Khouzame, Director of The Carter Sydney says, ‘I have always been inspired by music, food, culture, and artists. Our vision has been centred around an experience for our guests so they can make memories and have fun. We are so humbled that we have been able to do just that, over five incredible years. We are very excited to share what we have been working on with Graeme and the team.

Even the cocktail list is impressive, curated to perfection with a combination of sweet, sour, and spicy options for every palette. Feeling like a ‘Trillionaire’? Gin, apricot, citrus & spiced syrup will go down a treat. It’s bound to get ‘Hot in Here’ with jalapeño tequila, pink grapefruit, agave, and spicy salt or perhaps it’s time for an ‘Encore’ with vodka, cold brew coffee topped with toasted marshmallow.

We don’t want people to feel like they need to wait for the weekend to unwind and have fun. We want to be part of bringing the excitement and the life back into the city and we plan to do that with amazing food, drinks, and music throughout the week’, he continued.

The Carter will open its glass brass doors during the week for lunch and dinner for the first time ever. The new menu will be available on Wednesdays and Thursdays between 12pm-10pm. On Fridays and Saturdays, food will be served from 12pm - 2am.
