Three Easy Family-Friendly Recipes for Healthy Holiday Hosting

The countdown is on for Christmas celebrations, with dining on the deck and loved ones coming to visit, what better way to impress your relatives than with an array of quick, healthy and delicious homecooked recipes for the whole family?

Nutrition and fitness coach, Danni Duncan has shared her top 3 dishes from her app, Fit by the Figure which ensures to keep the littlest to the eldest member of your family satisfied.

Danni created the app Fit by the Figure as a holistic guide and one-stop-shop for reaching health and fitness goals.  Duncan developed this after helping hundreds of clients on their wellness journey and realising there were no tools on the market that approach wellbeing in a simple, uncomplicated, no BS” way and span across multiple areas including fitness, nutrition, and mindset.

Danni has rounded up her top three quick, nutritious and delicious recipes to keep your whole family happy and healthy over the festive season.

Banana Pancakes

Ingredients

1 egg

1 banana

10g vanilla protein powder

15g oats

1/2tsp cinnamon

½ tsp vanilla extract

 

Method

Mash the banana and beat in the egg. Stir in the oats, chia seeds, vanilla protein power, cinnamon and vanilla extract.

Pour mixture onto a frying pan and into circles with a 5cm diameter. Cook for 3 minutes each side or until cooked.

Add berries, yogurt and 15ml maple syrup to serve.

 

Prawn and Chorizo Pasta with Garlic and Chilli

Ingredients

Parmesan to serve, garlic

4 cloves of garlic, finely sliced

300g prawns

10g butter

1 birdseye chilli (remove seeds and finely sliced)

8 cherry tomatoes, halved

400g spaghetti

240g chorizo sliced

15ml extra virgin olive oil

1 red chilli, finely sliced

¼ cup white wine

½ cup fresh parsley, chopped

 

Method

Cook spaghetti as per instructions

Fry off the chorizo (no oil needed) until cooked, set aside

Add the oil and butter to a pan – add the garlic and chilli and cook until fragrant

Add the prawns and wine then cook for 3 minutes

Add the cherry tomatoes, parsley and chorizo. Cook until prawns are cooked through

Stir through the spaghetti and serve with parmesan

 

 

 

Zucchini Fritters with Spinach and Yogurt Dip

Ingredients

Handful of baby spinach

1 tsp olive oil

2 spring onions, chopped

2 zucchini, grated

2 eggs

2 tbsp self-raising flour

100g cheese, grated

60g sweetcorn

5g unsalted butter

Salt and pepper

Juice of half a lemon

1 clove garlic

½ cup Greek yogurt

 

Method

Mix zucchini, eggs, spring onion, flour, cheese, sweetcorn, salt and pepper together

Melt the butter in a pan, add spoonful’s of mixture to make 5cm rounds

Spinach and Yogurt Dip

Place yogurt, lemon, spinach, garlic,oil, and pepper into a blender until smooth
